No Egg Lemon Cake

100ml vegetable oil
275gms self raising flour
200gms caster sugar
1 teaspoon baking powder
1 lemon zest and juice or essence any flavour

150gms icing sugar
1lemon juice or water and essence

Heart oven gas mrk 6, 200 deg C. Oil 1lb loaf tin and line. Mix flour, sugar, baking powder and lemon zest. Add oil, lemon juice and 170ml cold water, mix until smooth. Pour into tin and bake for 30mins or until cooked. Leave in tin for 15 mins. Remove and cool. Mix icing sugar with enough juice and mix until pouring consistency. Pour over cake and decorate if required.
